Vegetarian Tacos

Every time I have these tacos I remember why I love them so much. They are so good and so simple.  You can use whatever kind of tortilla you want.  I like to use corn because they generally have better ingredients than flour and I just like them :) Hope you enjoy!



Vegetarian Tacos

1 tablespoon olive oil
1/2 cup uncooked brown rice (I used short grain this time but you can use whatever you have on hand)
1 (15 oz) can black beans
1/2 of a medium sized red or yellow onion
1 green bell pepper chopped
1 cup grape tomatoes, halved
1 avocado, diced
1/4 cup chopped fresh cilantro
Juice of 1-2 limes
1+ tablespoons of taco seasoning (recipe listed on this blog under the label of "seasonings")

Directions

Cook rice in 1 cup of vegetable or chicken broth.  Once rice is done cooking set aside.  Heat olive oil in a skillet over medium heat.  Add onion and saute until soft and translucent.  Drain and rinse black beans and add them to skillet along with the rice and 1 tablespoon of taco seasoning.  Let all ingredients warm through on the stove.  Chop bell pepper, grape tomatoes, avocado, and cilantro and mix them together in a bowl.  Squeeze the juice of a lime(s) over the top of the vegetables and load up your tortilla with sourcream, rice and bean mixture, and vegetables.  Mmmm...Enjoy!
