Chicken & Rice Soup

I got this recipe from wordofwisdomliving.com, another great site that has great information on health.  This recipe was simple and hearty. This recipe is also easy to make modifications to (which I did of course :) ) and has good base flavors.  

I realize my pictures are pitiful but I am not a photographer, I'm using an itouch to take all these pics, and I figure pitiful pictures are better than no pictures :) 


Chicken & Rice Soup

1 tablespoon olive oil
1 chicken breast or about 1/2 a pound of chicken
7 cups liquid (I used 4 cups chicken stock and 3 cups water.)
2 cups carrots
1/2 yellow onion, chopped
1/2 cup short grain brown rice (wild rice would probably be a better option but I didn't have any on hand)
2 bay leafs
1 tsp dried parsley
½ tsp ground thyme
1 tsp each, salt and ground pepper

Directions
Cook rice in one cup water and set aside.  Heat olive oil in large stock pot over medium heat.  Add onion and saute until soft and translucent.  Add carrot, chicken breast, chicken stock, rice, bay leafs, parsley, thyme, salt and pepper.  Simmer over medium heat for about 40 minutes.  Cut up chicken and return to pot, simmer for an additional 10 minutes.  Adjust seasonings to taste.  Serve with homemade wheat bread if you have some on hand.  Enjoy!
