Ham & Potato Skillet Dish

I have tons of left over Christmas ham in my freezer so I have been trying to use it in recipes.  So last week I thought a skillet dish sounded good and this is what I came up with.



Ham & Potato Skillet Dish

1-2 Tbsp olive oil
1/2 of a yellow onion, finely chopped
3 Russet potatoes, peeled and cubed
1 Green bell pepper
1/2-1 pound ham, cooked and cubed
1/2 tsp ground black pepper (or to taste)
1 1/2 tsp seasoning salt (or to taste)

Directions

Heat olive oil in skillet over medium high heat.  Add potatoes and cook until they start to brown and become tender.  Add the onion, bell pepper, ham, pepper and seasoning salt.  Cook over medium heat until onion and bell pepper are tender.  You can top with cheese if you'd like for added flavor.  Enjoy!
