Cucumber & Garbanzo Pilaf

Another recipe from greenshakesandgiggles.com.  I really enjoyed this dish, it had a lot of great flavor and is super healthy.  Who knew eating so healthy could taste so good?  I did change a few things from the original recipe.  The original recipe called to serve this with millet but I don't have any millet so I used quinoa, which turned out wonderfully.  You could use any grain and it would turn out great.  Enjoy!


Cucumber & Garbanzo Pilaf

Lemon-Cilantro Dressing

3 Tbs. Olive Oil
1/3 cup lemon juice
1 cup fresh, chopped cilantro, loosely packed
1/2 cup fresh, chopped parsley

Put all ingredients in a food processor until parsley and cilantro are finely chopped. Set aside.

Pilaf:

1 English cucumber, diced
1/2 medium red onion
1 15 oz. can garbanzo beans
1 cup uncooked quinoa (or whatever grain you want to use)
2 cups water
1/2 tsp. Real Salt

Mix diced cucumbers, onion, and garbanzo beans in dressing and let marinate in a mixing bowl while making pilaf.

Place quinoa in a medium sauce pan with 2 cups of water.  Heat to a boil and then let simmer until all the water is evaporated.  Once water is evaporated add in the salt.  Fluff the quinoa.

Add quinoa to mixing bowl with dressing and other veggies if desired (I added avocado and grape tomatoes).  Mix well and adjust seasonings to taste.  

*I made this again with millet last night and I like it much better with quinoa.
