The other night I was making a hoopla of a salad for dinner that had a bunch of randomness to it. I wanted a cilantro-lime vinaigrette to use for it so I set out on a quick search and I found this recipe at allrecipes.com. I ended up using this one because it had the best and most reviews out of all of the other cilantro-lime dressings I looked up. I really liked how this one had some sweetness to it from the honey. Cilantro-Lime Vinaigrette
1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic
3/4 teaspoon minced fresh ginger root (I didn't use this)
1/4 cup lime juice
2-3 tablespoons honey, or to taste depending on how sweet you want it
2 teaspoons balsamic vinegar
1/2 teaspoon salt, or to taste
1/4 cup packed cilantro leaves
1/2 cup extra-virgin olive oil
1 clove garlic
