Fettuccine Salad

This is a recipe I got from Ryan's sister a long time ago.  I'm not sure where she got it but it is a really great salad.  It has a lot of bulk to it so it can be used as a main dish, that is at least how I serve it.  The original recipe calls for sugar in the dressing but I substituted honey for the sugar and it turned out just as great.  Enjoy!

Fettuccine Salad

Dressing

2 Tbsp dijon mustard
1/3 cup red wine vinegar
3-4 Tbsp honey, or to taste (original recipe calls for 1/3 cup sugar)
1/2 cup oil, I use grape seed oil

If you have a blender blend all ingredients up in your blender.  If you don't have a blender whisk all ingredients together until combined. 

Salad

Romaine lettuce (as much as you would like-we use quite a bit)
1/2 a package fettuccine noodles
1/4 cup shredded Parmesan cheese
1/3 cup slivered almonds
1-2 red peppers, diced
1 cup purple grapes, halved
Craisins (optional)
1 cup shredded chicken (optional)

Directions

Cook fettuccine noodles according to package directions.  Drain and set aside.  Cook chicken and shred into small pieces.  Cut up pepper(s), grapes, and lettuce.  Combine all ingredients and toss in dressing.  Enjoy! (We serve this cold)
