Zucchini Patties

These were really wonderful!  I have been wanting to make zucchini patties for a while but thought that they would probably be time consuming.  When I finally sat down to look for a recipe I realized how easy these would be to make.  They were so quick and so good!  My baby loved these and so did we! I found this recipe at chefinyou.com.  These are super easy to make and worth trying.  We ate them with some homemade tomato soup and grilled cheese.  A great appetizer or side dish.  Enjoy!




Zucchini Patties

2 Zucchini, grated with skins
2-3 tbsp whole wheat flour
1-2 tbsp corn flour (if you don't have corn flour/meal you can just use more wheat flour)
1/2 cup part-skim Mozzarella cheese
salt and pepper to taste
garlic powder to taste (optional)

Directions

Squeeze out the excess water from the grated Zucchini
Add all ingredients together in a large bowl.
Mix them well with your hands. Increase flour in case it is too sticky. The final consistency should allow you to make balls and flatten them out as patties.
Heat a nonstick skillet over medium heat.  Coat one side of each patty with olive oil and place in pan.  Let cook for 3-4 minutes, or until browned on one side.  Before flipping to the other side brush the top (uncooked side) with olive oil and then flip and cook for another 3-4 minutes, or until browned.

Makes 12 small patties
