We had homemade Cafe Rio salad the other night vegetarian style. It was so easy to make and so good! I found the recipe for the dressing at yummly.com. Enjoy!

Vegetarian Cafe Rio Salad
Rice
1 tablespoon olive oil
1 cup long grain brown rice
2 cups chicken or vegetable stock
2 tablespoons freshly squeezed lime juice
Zest of one lime
1/2 cup cilantro, chopped
1 teaspoon salt
Heat oil over medium high heat, add rice and allow to cook for 2 minutes. Add other ingredients and bring to a boil. Cover and reduce heat to medium low or low, and cook until rice is done. Add one can drained and rinsed black beans with rice and let beans heat through before serving.
Dressing
1 cup mayonnaise or vegenaise
1 cup sour cream
1/2 bunch of cilantro
3 tomatillos (chopped)
2 tablespoons minced red onion
1/2 bunch of cilantro

2 garlic cloves
1/2 jalapeno pepper (seeds)
1 lime juice
1-2 tsps salt

Put all ingredients in a food processor and blend until smooth.
Serve rice and bean mixture over a tortilla, top with lettuce and favorite veggies, add dressing and indulge :)
