Three Bean Lentil Soup

I was thinking that a bean soup sounded good and I had some lentils I wanted to use so I researched a few recipes and this is what I came up with. This is a nutritious protein packed soup. You could serve this with tortilla chips to make it a little more "hearty" but all the beans and lentils were plenty hearty for me. Also, if you aren't a big fan of vegetarian style you could add some sort of meat to this. Enjoy! 

Three Bean Lentil Soup 

1 tablespoon extra virgin olive oil
1/2 medium onion, finely chopped 
2 cups carrots chopped 
1/2 cup uncooked green lentils 
1 (15 oz) can black beans 
1 (15 oz) can kidney beans 
1 (15 oz) can great northern white beans
4 cups water
5 cups chicken or vegetable broth
2 1/2 tablespoons chili powder 
2 teaspoons ground cumin (plus a pinch)
1 teaspoon oregano (plus a pinch)
1 1/2 teaspoons salt

Directions

Heat oil in a large pot over medium heat.  Add onion and carrots, cook until softened and onions are translucent.  Add black beans, kidney beans, great northern beans, lentils, water, chicken or vegetable broth, chili powder, cumin, oregano, and salt.  Bring to a boil over high heat.  Reduce heat to medium-low and simmer for about an hour or until lentils are cooked through. Taste and adjust seasoning if needed.  You can serve with sour cream, cheese, avocado and lime juice.
