Tuscan White Bean Bliss

I found this recipe at greenshakesandgiggles.com. I made it tonight for dinner with a few minor adjustments and it was really good! 
 

Tuscan White Bean Bliss

1/2 cup sun-dried tomatoes (I pureed these in my food processor because I don't like big chunks of sun dried tomatoes)
1 tablespoon extra virgin olive oil
1/2 of a large yellow onion finely chopped
1 1/2 Italian zucchinis (chopped)
3 cloves garlic minced
2-3 cups fresh spinach
2 cans great northern beans
1/2 cup water
1/2 cup chicken broth
Juice of 1 lime
1/2 teaspoon sage (plus a pinch)
1 teaspoon sea salt
1/4 teaspoon dried red pepper flakes
1/4 teaspoon black pepper
1 teaspoon basil (plus a pinch)

Directions

Heat oil in large pan over medium-high heat.  Add onion and garlic and cook, stirring, until soft and translucent (about 5 minutes).  Add squash and cook for 5 minutes more.  Add spinach, beans, tomatoes, water, broth, sage, salt, pepper, red pepper flakes, basil and lime juice, stirring to combine.  Add more salt to taste if desired.  cook for 10 minutes longer.  Serve right away over brown rice or any other whole grain of your choice.
